Apple Raisin Pecan Jello

We love jello at my house. Strawberry jello to be exact. This is a dessert that we have multiple times a week. I figure that the chemicals in it are probably horrible, but maybe the fruit balances it out....?


Ingredients:
1 Package of Sugar Free Strawberry Jello (Or another flavor if you like)
1-2 Chopped Apples (We use Granny Smith because we like to offset the sweet jello with tart apples)
2 TBSP Chopped Pecans
2 TBSP Raisins 

Mix the jello according to the package. We usually use the quick set method. Before refrigerating, add in the extras. Chill until set, then enjoy!

Oatmeal Pecan Raisin Cookies

So tonight I just NEEDED a cookie. Have you ever felt that way? Here is a recipe for some pretty diet-friendly cookies that can be altered to fit your tastes.



  

Ingredients:

1/3 cup unsweetened applesauce
 A pinch of salt
1/8 teaspoon baking powder
1/4 cup Liquid Egg Whites
2/3 cup baking Splenda 
1 teaspoon vanilla
1/4 teaspoon cinnamon
1 1/3 cup Quick Oats
1/4 cup Raisins
1/4 cup chopped pecans 
Mix all ingredients.  GREASE THE COOKIE SHEET!!!!! Make into 15 cookies. Bake at 350 for 10-12 minutes.

These have roughly 55 calories per cookie. So I will sometimes have a few for breakfast.. :) 
  
The first time I made these, I forgot to grease the cookie sheet. It was a disaster....

You can really mix this up however you want. Use pumpkin puree instead of applesauce, walnuts instead of pecans, craisins instead of raisins, and so on and so on. Happy experimenting!
